Pizza & Celebration Throwbacks

Hi Everyone!

So Yesterday was my Daddy's Birthday :)  We didn't do too much but I tried to make it special as possible.  He went golfing with his friends during the day, so I tried to think of something to make for dinner. I finally decided on making homemade pizza.  We rarely eat pizza at my actually and if we do have pizza it is because we make it at home.  I remember as a child having pizza like every week because of pizza day, but I seriously think that I got a little sick of it after that.  Do not get me wrong every once in a while I loved eating a yummy slice of pizza, but I usually prefer a thin crispy crust with tons of veggies on my pizza.

The dough I made was a whole wheat flax crust, which was incredibly easy.  It only took about 45 minutes tops to make (including making the dough and letting it rise).  I split the dough into two, so I could try out two different types of pizza, a BBQ chicken and a Prosciutto mozzarella pizza. They were both amazingly delicious and hit the spot. (Both pizzas were almost all gone!!!!)  I promise to post the recipes soon because they are too good to keep to myself.

After dinner we had a key lime crunch cake (yummm!) and opened presents.  It was a nice day and I think my Dad appreciated everything. This weekend we are going out to eat at a new local restaurant so I will keep you updated :)

Also this past weekend I attended my old Dance Studio's banquet dinner! Even though I do not go there I still am very close to the studio.  Here is a picture of Alea and I from this year and a THROWBACK picture from last year.

Life Lately

 Goodness, it’s been a while! Rachael started posted earlier this week but today is my first day back in blog land.  Of course, I’ve been keeping up with reading all my favorite blogs, but unfortunately I had to be MIA from my own blog for a little longer that I expected.  I am going to try my absolute hardest to keep up with posting because I really do miss it.  I thought I’d share a quick little recap of what I’ve been up to lately!

Summer Lovin' Shorts

Good Morning!!

Finally it is hump day, hehe.  That makes me kind of happy because I work today and than have five yes FIVE whole days off.  I am not too sure what I am going to do but I know I will find something to do.  There is always another drawer or closet to organize (hehe way to obsessed with cleaning).  Lately here it has been raining and raining and raining.  I think I am having sun withdrawals, BUT I do see a little blue sky and sun today.  And when I see sun and hear that summer is only one month away I start getting in the summery mood.  That means summer clothes!!  Sandals, shorts, tank tops, dresses, bathing suits... sometimes I do not know why I live somewhere that is cold almost the whole year! 

As much as I love wearing sundresses I love shorts!  And there are so many styles and lately I have been lovin' the bright coloured shorts.  Here I am wearing some coral shorts from American Eagle.  They are a casual trouser short and are extremely comfortable.

    The nice thing about shorts is they come in different lengths, different colours, and different materials.They are even making trouser shorts that are appropriate length for work.  Anyways have an amazing whimsical Wednesday!!

    Roasted Corn


    So like I said before, I have been cooking and baking lots lately now that I am off for the summer.  And one of my goals this summer was to try a new recipe or food idea each week. So I saw this idea on Pinterest and decided to give it a try.

    Roasted Corn!
    I love corn, but I am not a big fan of frozen corn (I prefer corn on the cob). So this idea intrigued me because I felt that the corn would develop a very nice flavour by roasting it. And it is simple, easy, and quick.
    Take Frozen Corn, place on a pan, drizzle with olive oil, and sprinkle with your seasonings of choice (salt, pepper, parsley ect). Broil the corn for about 5 to 8 minutes.  Every few minutes or so make sure you check and flip/toss the corn because it can burn easily. If you decide you do not want to put oil on the corn, you have to be extra careful with them burning.

    You can eat it plain, in salads, wraps, toss it in soups. I even mixed it with some salsa and a dollop of sour cream, sooo yummy :)

    Marvelous Mondays

    Hi everyone!

    I am so sorry that we have not been posting regularly.  I have actually kind of had a little writers block and have been crazy busy.  So I thought I would tell you all what has been up in my life and how Marvelous it has been!!

    1. I got my G !  I have been procrastinated with this for a while.  I was quite nervous but it was not bad at all. 

    2. I have been baking lots.  I have made oatmeal cups, muffins, cookies, french toast, sweet potato brownies. I have been in the experimenting mode.  I always wanted to be a baker when I was little, so sometimes I can't help myself from wanted to try every recipe I see.  This summer I am going to aim to try a new recipe (whether is a sweet or savory food) every week. 

    3.  I gave my Doggy a nice bath.  She was kind of getting a little smelly, but now she is beautiful, fuzzy, soft, and white. She has an amazing shampoo called Earthbath All Natural Mango Tango Shampoo.  This shampoo contains no parabens, phosphates, synthetic dyes, or perfumes. They pride themselves in making safe products that will not harm the animal.  And the bonus is that is smells simply amazing!

    4.  I have been recommended for a vocal provincial competition for classical voice and musical theater.  Though I have decided to only go for musical theater this year.  I am quite excited for this opportunity and can't wait for June to come around :) I'll keep you posted on the songs, my progress, and results.  

    5.  I spent the weekend watching some old shows I love. Like Make it or Break it.  This is a show about four girls who are aiming to make it to the 2012 Summer Olympics. It's a fairly good show and used to be a favorite of mine. 

    6.  This is one of my proudest highlights of my week. I have started to run. The first few days I ran about 2 miles, than went to 2.75 miles, and finally did my first 5 k (which is about 3.1 miles). I was so happy bec
    ause I used to hate running since I would get horrible headaches and feel lightheaded. But now I actually feel great going for these runs. Though the last few days I have been working (at work I am on my feet the whole time) so I usually don't go for runs on those days. But I am going to start again this week :)

    Pesto Tomato Bread

    We are back!!!! I can't believe I am done another year of school, but I am so glad to finally have a break and be home.  I thought today I would share a recipe with you all today.  The one thing about being home and not worrying about school is that I get to cook/bake more often!  I love finding new recipes (seriously you should see how many recipes I have bookmarked) and I absolutely LOVE being in the kitchen.  I really wanted to start making my own bread, so I thought I would start with making a bread using my bread machine. I actually just used the bread machine for the mixing (to make the dough) and then baked it in the oven.  The bread was a Tomato Pesto Bread.  It was soo flavourful and light and fluffy.  It was the perfect bread for a savoury sandwich or even just plain.

    This bread uses bread flour, which has a higher protein content than all purpose flour.  This helps with the production of gluten.  Gluten gives the bread its elastic, light, and chewy texture.  Lower gluten in breads can lead to a heavy and dense bread. If you substitute all purpose you may end up with a heavy, dense bread that may not rise as much.

    Pesto Tomato Bread

    1/2 cup Milk
    1/4 cup Water
    1/4 cup Pesto
    1/4 cup Sun dried Tomatoes coarsely chopped(NOT oil packed)  Pre-soak in water or broth of choice for 10 min and drain.
    2 cups of Bread Flour
    1 tsp Salt
    1 tbsp sugar
    1 tsp Bread Machine Yeast (Instant yeast)

    Measure ingredients carefully and place in bread machine pan. When putting them in the pan, usually it is liquids first, flour, other dry ingredients and than the yeast (Check your bread machine manual to ensure you are putting them in the correct order.)

    If going to make the bread in the bread machine select basic/white cycle and light or medium crust colour. Once complete, remove baked bread from pan and cool on wire rack.

    If going to make in the oven, select dough cycle on machine. Once the dough is made, remove from the pan and place in bread pan. Cover and allow to rest until it has doubled its size.  Cook in oven at 350 for 30-40 minutes.
